SPINACH PIZZA 
2 loaves frozen bread dough, defrosted
3 pkg. spinach
Salt and pepper to taste
1 c. chopped onion
1 c. Parmesan cheese
1/2 c. oil

Grease 2 jelly roll pans. Work the dough over the 2 pans. On one pan, work the dough up the edges. Cover and let rise several hours.

Cook 3 packages spinach and drain. Saute spinach, onion, and garlic in oil. Add salt and pepper to taste. Cook 5-10 minutes. Put spinach mixture on the dough pan with the dough going up the sides. Sprinkle Parmesan cheese over it. Place other dough on top, pinch sides, cover and let sit 1/2 hour. Put oil on top and salt and pepper. Cook for 10 minutes at 400 degrees, then 10-20 minutes at 350 degrees.
