SPINACH PIZZAS | |
4 (5 1/2 inch) pita breads 1 tbsp. vegetable oil 2 eggs 2 (10 oz.) pkgs. thawed frozen chopped spinach, drained and squeezed dry 4 oz. feta cheese, crumbled 1/2 c. cottage cheese 2 tbsp. chopped green onions Pepper to taste 4 slices (about 1 oz. each) Mozzarella cheese Heat oven to 350 degrees. Brush both sides of pitas with oil. Arrange on a baking sheet. Beat eggs with a fork in a large bowl. Add remaining ingredients except Mozzarella; toss to mix. Spread about 1/4 spinach mixture on each pita. Top with a slice of Mozzarella. Bake about 20 minutes until bread is crisp and Mozzarella melts and is slightly brown. Yield: 4 servings. |
