HEAVENLY PINEAPPLE SALAD 
1 pkg. (3 oz.) lemon gelatin
3/4 c. pineapple juice
1 tbsp. lemon juice
1 1/4 c. crushed pineapple
1 c. sharp cheddar cheese, shredded
1 c. heavy cream, whipped

Dissolve lemon gelatin in 1 cup boiling water. Add pineapple and lemon juice. Chill until slightly thick. Fold in 1 cup shredded cheese, pineapple and whipped cream. Pour into 1 1/2 quart mold. Chill until set and unmold on fresh salad greens.
