SHRIMP-FRIED RICE 
1/2 c. celery, chopped fine
3/4 c. onion, chopped fine
1 c. green pepper, chopped fine
1 very sm. clove garlic, crushed
5 tbsp. bacon fat or oil
2 c. cooked shrimp, diced
1/2 c. mushrooms
4 c. cold, cooked rice
2 tbsp. pimiento, chopped
4 tbsp. soy sauce

Simmer celery, onion, green pepper and garlic in fat for 5 minutes in a heavy 10" frying pan, stirring occasionally. Add shrimp and mushrooms and cook another 3 minutes. Then stir in rice, pimientos and soy sauce. Cook over moderate flame, stirring occasionally until mixture is hot. Serve immediately. Makes 6 portions.
