RED BEAN LASAGNA | |
1 lg. onion, chopped (1 c.) 1 med. carrot, chopped 1 clove garlic, minced 2 tbsp. cooking oil 2 c. tomatoes, cut up 2 c. red beans, cooked and drained 1/4 c. snipped parsley 1 tsp. sugar or honey 1 tsp. dried oregano, crushed 1 tsp. dried basil, crushed 2 c. fresh mushrooms, sliced 1 beaten egg 1 1/2 c. shredded Mozzarella cheese (part skim) 1 1/2 c. 2% lowfat cottage cheese 1/4 c. grated Parmesan cheese 6 lasagna noodles, cooked Cook onion, carrot and garlic in oil. Add undrained tomatoes, beans, parsley, sugar, oregano, basil and salt. Bring to a boil. Cover and simmer 15 minutes. Combine egg, 1/2 of the Mozzarella, cottage cheese and Parmesan cheese. |
