SPANISH RICE 
5 slices bacon, diced
1/2 c. chopped onion
1/2 c. chopped green pepper
1 clove garlic, minced
1 c. regular rice, uncooked
1 (10 3/4 to 11 oz.) can condensed tomato soup
1 soup can water
1 c. salsa

In 10-inch skillet over medium heat, cook diced bacon until lightly browned. Stir in onion, chopped green peppers and garlic; cook until vegetables are tender, stir occasionally. Stir in rice; cook until rice is slightly browned, stirring often. Stir in tomato soup, water and salsa; mix well. Over high heat, beat to boiling. Reduce heat to low. Cover; simmer 25 minutes, stir occasionally. Makes 6 servings.
