MASHED POTATO CASSEROLE 
3 c. mashed potatoes or 6 serving size instant potatoes
4 oz. pkg. Philadelphia cream cheese
1 egg, beaten
2 tbsp. chopped onion
1 tbsp. parsley
1 tbsp. butter
Paprika

Beat cream cheese into mashed potatoes. Stir in onion, parsley, and beaten egg. Pour into well-greased casserole. Dot with butter, then sprinkle with paprika. Bake 30 minutes at 400 degrees. Can be prepared ahead of time and baked just before serving. I use a 9-inch square baking dish.
