PEPPERMINT HOLIDAY MOLD 
12 peppermint candies
2 c. water
2 pkgs. (4 serving size) or 1 pkg. (8 serving size) strawberry flavored gelatin
1 1/2 c. cold water
2 c. thawed non-dairy topping

Place candies and 2 cups of water in saucepan. Bring to a boil and simmer gently, stirring occasionally until candy has melted. Completely dissolve gelatin in hot peppermint water in a bowl. Add cold water and chill until slightly thickened.

Spoon 2 1/2 cups of the thickened gelatin into the mold. Blend whipped topping into remaining gelatin. Spoon over clear layer in mold. Chill at least 4 hours. Unmold. Garnish with additional whipped topping and peppermint candies. Makes 5 cups or 10 servings.
