HAM OR CHICKEN TIMBALES 
4 eggs, slightly beaten
1 1/4 c. milk
1 tsp. salt
1 tsp. onion juice
1/8 tsp. pepper
1/4 tsp. paprika
1 1/2-2 c. chopped cooked ham or chicken

Heat oven to 350 degrees (moderate). Mix all ingredients. Spoon into buttered custard cups. Set in pan of water (1 inch deep). Bake about 30 minutes or until silver knife inserted 1 inch from edge comes out clean. Unmold. Serve with hot Bechamel Sauce. 6 servings.
