GREAT PUMPKIN COOKIES 
2 c. flour
1 c. quick old fashioned oatmeal, uncooked
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 c. butter, soft
1 c. brown sugar, packed
1 c. white sugar
1 egg, slightly beaten
1 tsp. vanilla
1 c. solid packed pumpkin
1 c. semi-sweet chocolate chips
Assorted frostings or peanut butter
Candies to make faces

Preheat oven to 350-375 degrees (depending on oven). Combine flour, oats, baking soda, cinnamon and salt. Cream butter, gradually add sugars beating until light and fluffy. Add egg and vanilla, mix well. Alternate adding dry ingredients and pumpkin mixing well after each addition. Stir in chocolate chips. For each drop 1/4 cup dough onto lightly greased cookie sheet. Spread into pumpkin shape using a small spatula. Add a small amount of dough to each cookie to make stem. Bake 15-20 minutes until cookies are firm, and lightly brown. Remove from cookie sheet and cool on rack. Decorate with frosting or peanut butter and candy to make faces.
