1 c. mashed sweet potatoes
3 eggs, well beaten
3/4 c. brown sugar (packed)
1 tsp. cinnamon
1/2 lb. hot bulk sausage
1 apple (peeled and sliced)

Mix the first five ingredient and pour into 8x8x2 inch pan or baking dish. Brown and crumble bulk sausage. Drain on paper towel. Peel and slice apple over sweet potato mixture. Sprinkle sausage over top of casserole. Bake at 375 degrees for 40-45 minutes. Serves 6-8.
