SAUSAGE-SWEET POTATO BAKE 
4 lb. sausage
8 med. sweet potatoes, peeled and sliced (cooked or canned, if desired)
12 med. apples, peeled or unpeeled, and sliced
Browned sausage
1/2 c. sugar
5 tbsp. flour
2 tsp. ground cinnamon
1 tsp. salt
2 c. water

Break sausage into small pieces and brown in large skillet. Drain off excess fat. Arrange in 12x18 inch baking pan or equivalent: sweet potatoes, apples, and browned sausage.

Combine sugar, flour, cinnamon, salt, and water and pour over. Cover with foil and bake at 375 degrees for 50-60 minutes or until potatoes and apples are tender. Serves 25, double for 50.
