SWEDISH PANCAKES 
1 egg
1 c. milk
1 c. flour
Dash of salt

Beat with an egg beater. Let batter sit for 15 minutes before cooking.

Using cast iron skillet (heated and greased) pour in 1/4 to 1/2 cup batter and "twist" skillet to allow batter to cover entire bottom of skillet. Turn when slightly brown. Double or triple recipe for large family.

Place on plate. Spread with butter and syrup or jam. Roll up and eat.
