PECAN PIE BARS 
2 1/2 c. flour
1 c. butter (2 sticks) plus 3 tbsp. butter, melted
2 c. sugar, divided
1/2 tsp. salt
4 eggs
1 1/2 c. Karo syrup
1 1/2 tsp. vanilla
2 1/2 c. pecans, coarsely chopped

Preheat oven to 350°F. Spray 15 x 10 x 1 inch baking pan with no-stick cooking spray. In a large bowl, with a mixer at medium speed, beat flour, 1 cup butter (cut into pieces), 1/2 cup of sugar and salt until mixture resembles fine crumbs. Press firmly into pan and bake 20-23 minutes or until golden brown.

Meanwhile, in large bowl, beat eggs, Karo syrup, 1 1/2 cups of sugar, 3 tablespoons of melted butter and vanilla until well blended. Stir in pecans and immediately pour over hot crust and spread evenly.

Bake 25 minutes or until filling is firm around edges and slightly firm in center. Cool completely and cut into 2 x 1 1/2 inch bars.

Yields 48 bars.
