SWEDISH EGG PANCAKES 
6 eggs, well beaten
3 c. milk
2 c. sifted flour
2/3 c. sugar
3/4 tsp. salt
Oil or butter for frying pan

Beat eggs, add milk. Add sifted dry ingredients. Beat thoroughly. Heat small frying pan. T-Fal pan or Teflon pan works well. Use a little oil in pan. Put a spoonful (teaspoon or tablespoon, depending on pan size) in hot pan. Tilt pan side to side as batter covers pan. Fry. Turn carefully. Fry other side, just until cooked.

Serve with jelly or sugar on cake and rolled up. Some people like to stack the cakes with jelly in between each and then cut wedges and serve.
