SWEDISH PANCAKES 
2 eggs
2 tbsp. sugar
2 c. milk
1 tsp. salt
1 c. cake flour
1/2 c. reg. flour
Dash of nutmeg or vanilla

Beat the eggs gently. Do not let them become stiff. Toss in lightly the milk, salt, sugar and nutmeg.

Add very lightly a little flour at a time, stirring gently. Keep mixture thin. Have skillet very hot before putting butter on it. Brown quickly.
