ZUCCHINI BREAD | |
1 c. salad oil 3 eggs, slightly beaten 2 c. sugar 2 c. grated raw zucchini, peeled 2 tsp. vanilla extract 3 c. pecans or walnuts, chopped 1 c. raisins 3 tsp. cinnamon Combine oil, eggs, sugar, zucchini and vanilla in large mixing bowl. Blend well. Stir flour and cinnamon. DO NOT BEAT. Stir in nuts and raisins. Spoon batter into 2 well greased 8 1/2 x 4 1/2 x 2 inch loaf pans. Bake at 325 degrees until done. (Depending on oven, usually takes about 45 minutes to bake.) Yields 2 loaves. |
