BAKED WINTER SQUASH 
2 sm. acorn or butternut squash
Salt
2 tbsp. butter
3 tbsp. maple syrup
Cinnamon

Preheat oven to 400 degrees. Split the squash and remove the seeds. Sprinkle the cut sides with salt. Place cut side down in a baking dish and bake for about 40-50 minutes or until the squash is easily pierced with a fork. Turn and make indentations with a fork across the cut side of the squash. Spread with butter, drizzle with the maple syrup, sprinkle cinnamon on top and return to the oven for a minute or two. Serve hot. Serves 4.
