JOE'S 20 MINUTE LOW-FAT BEEF
STROGANOFF
 
This tastes like beef stroganoff from a restaurant, but its fast, simple, and if you use low-fat or fat-free sour cream, its amazingly healthy and low-fat!

1 (1 lb.) pkg. fully-cooked beef tips and gravy (Hormel, Tyson, etc.)
2 cups uncooked small egg noodles or rotini
1 (8 oz.) pkg. fresh sliced mushrooms
1 onion, chopped
1 (8 oz.) tub dairy sour cream (reduced fat or regular)
salt and pepper, to taste

Start the water boiling for the pasta and add pasta when it starts to boil. Meanwhile start cooking the sliced mushrooms until they begin to brown and add onion. Let the onion cook with the mushrooms until caramelized.

While doing this, heat the package of beef tips in the microwave per package directions, then slice the meat into smaller pieces (I do it in the serving tray it comes in). By this time the onions and mushrooms, and the pasta should all be done. Shut off the heat on the mushrooms and onions.

Drain the pasta and add it to the mushrooms and onions and add the heated beef tips and gravy. Stir in dairy sour cream and season with salt and pepper. Enjoy!

Serves 2 to 3.
