SPAGHETTI PIE | |
1 lb. ground beef or Italian sausage or combination of both 1/2 c. chopped onion 1/4 c. chopped green pepper 1 (8 oz.) can tomatoes, chopped & undrained ) can tomato paste 1 tsp. sugar 1 tsp. dried basil 1/2 tsp. garlic salt 2 tbsp. butter 6 oz. spaghetti, cooked & drained 1 c. grated Parmesan cheese 2 eggs, beaten 1 c. low fat cottage cheese 1/2 c. shredded Mozzarella cheese Saute meat with onion and green pepper until beef is brown and onion is tender. Drain off fat. Stir in tomatoes, tomato paste and spices. Simmer over medium heat for about 10 minutes. Stir butter into hot spaghetti (about 3 cups if using leftover); toss until melted. Stir in Parmesan cheese and eggs. Pat into the bottom and sides of a well buttered 10" pie plate to form "crust". Spread cottage cheese over crust, top with meat mixture. Bake 20 minutes at 350 degrees. Sprinkle Mozzarella on top and bake 5 minutes more, until cheese melts. |
