SIRLOIN TIP ROAST WITH STRAINED
CARROTS
 
2 1/2 to 3 lb. boned and tied sirloin tip roast
1 med. onion
1 green pepper
3 bay leaves
2 m. cloves garlic, slivered
1 jar strained baby carrots

Cut slits into the roast and insert slivered garlic, placing pieces evenly around the whole roast.

Place on roasting rack. Top roast with strained carrots and onions and peppers, lay on the bay leaves. Roast at 325 degrees until meat is done to your doneness.

Serve with oven roasted potatoes and a green salad. For serving 6.
