SIRLOIN TIP ROAST WITH BACON 
2 1/2 to 3 lbs. bone and tied sirloin tip roast
2 sm. cloves garlic, slivered
2 tbsp. Dijon-style mustard
1/2 tsp. dried thyme leaves
6 slices bacon

Cut slits into the roast and insert slivered garlic, placing pieces evenly around the whole roast. Rub with 1 tablespoon of the mustard. Sprinkle with the thyme. Place on roasting rack. Top roast with the bacon, with ends covering the sides. Insert meat thermometer into the thickest part of the meat. Roast at 325 degrees until meat thermometer registers 145 degrees for rare or 160 degrees for medium to well done.

Transfer meat to serving board or platter. Remove bacon and strings. Replace bacon. Pour pan drippings into small skillet. Whisk in remaining 1 tablespoon mustard and heat to boiling. Continue boiling until drippings are shiny and thickened. Spoon sauce over roast, slice and serve immediately.

This roast was wonderful. It took about 2 hours from start to finish for it to get to 160°F and was still nicely pink inside. The mustard and bacon give it a very rich flavor. We loved it. This will be a new favorite at our house! Wouldn't change a thing about this recipe.

It was wonderful! My 11 year old is so picky and doen't usually like roast beef. She also hates mustard, so I was so afraid she would hate it. She LOVED it. She has made me promise to make this on a regular basis. The thyme, garlic, bacon, and dijon mustard add such a wonderful flavor to the roast. It was tender and very flavorable. We decided not to cut the bacon and serve with the roast because we don't like bacon that is not crisp but we do like the flavor it added. This recipe is excellent for company or just for family night.
