HOLIDAY SPICE SIMMERING
POTPOURRI
 
Ingredients for this potpourri can be purchased at a store which carries bulk herbs and spices (like Erewhon or the Bodhi Tree Bookstore). Some of the ingredients may need to be special ordered, and the potpourri should cure for a minimum of 2 weeks, so plan ahead.

2 c. cedarwood chips
1 1/2 c. cockscomb flowers
2 c. hibiscus flowers, whole
1 c. camomile (white/roman), lg.
1 1/2 c. cinnamon chips (Ceylon), lg.
1 c. juniper berries (red, whole
1 c. lemon grass (Mexican)
2 c. rosebuds & petals (dried), whole
2 c. rosehips, whole
1 1/2 c. oak moss, 1/2"
1 1/2 c. pine cones, birch
1 c. tilia flowers
1 c. allspice (Mexican), whole
1/2 c. cloves, whole
1/2 c. rosemary, whole
1/2 oz. strawberry with cinnamon fragrance oil
1/2 oz. bayberry fragrance oil

Mix all ingredients thoroughly in a large glass bowl or paper bag. Use your hands or non-metallic utensils. Add fragrant oils gradually on to the oak moss. Store in wide mouth jars or 3/4 full non-metallic containers. Cover tightly, then shake gently once a week. Cure for 2-6 weeks. Yields approximately 20 cups. For gifts pace 4x2x7 inch Cellophane bags. Close tightly and decorate with colorful holiday ribbon.

A simmering potpourri immediately provides the olfactory senses with an announcement of the Holiday Season.

Use 2-3 tablespoons of potpourri per cup of water. Simmer in an open kettle on the stove. It can simmer for hours, but be sure to add hot tap water as needed. Discard the simmered mixture after use.

This, of course, not for use in cooking or consumption.

This potpourri is quite easy to make, and creates a fragrant holiday momento when wrapped in cellophane bags with ribbon and given to your guests as they leave.
