VEGETABLE MISTO 
1 lg. red pepper, chopped
1 lg. green pepper, chopped
1 lg. onion, chopped
2 lg. potatoes, peeled & diced
2 tbsp. olive oil
2 med. zucchini, chopped
1 lb. fresh mushrooms, chopped
1/4 tsp. red pepper
1/2 tsp. Italian seasoning
1/2 c. fresh Italian parsley, chopped
3 cloves garlic, crushed
1/4 c. Parmesan cheese, freshly grated

In a large saute pan, saute the peppers, onion and potatoes in the oil for about 5 minutes; stir often. Add zucchini, hot pepper, mushrooms, seasonings, parsley and garlic; stirring often for 10 minutes. Toss with Parmesan cheese and serve hot. Serves 6.
