HONEY-PECAN BRAN MUFFINS | |
1 c. Fiber One cereal, crushed 1 c. milk 1/4 c. vegetable oil 1 egg 1 1/4 c. flour 1/4 c. sugar 1/4 c. honey 1/2 c. pecans, coarsely chopped 2 tsp. baking powder 1/2 tsp. salt Heat oven to 400 degrees. Grease bottom only of medium muffin cups (2 1/2 x 1 1/4) or line with paper baking cups. Combine cereal and milk. Let stand 5 minutes. Beat in oil and egg. Stir in remaining ingredients just until moistened. Divide batter among muffin cups. Bake until lightly brown, 20-30 minutes. Immediately remove from pan to cool. |
