CRAB CAKES | |
1 lb. crab meat 3/4 c. celery, finely chopped 3/4 c. onion, finely chopped 1 1/2 c. fine cracker crumbs (save 1/2 c. to roll cakes in) 1 tsp. parsley, crumbled 1 tsp. dry mustard 1/4 c. milk 1 cube butter, melted 1 tbsp. green pepper (optional) Salt and pepper to taste Mix all together and chill. Make into ball shape and flatten. Roll in 1 beaten egg and remainder of crumbs. Deep fry at 375 degrees. |
