ZUCCHINI BOATS 
3 sm. med. zucchini
1/2 lb. bacon, cooked and crumbled
1 med. onion, chopped
1 lg. tomato, chopped
1 c. grated cheddar cheese

Boil zucchini until they are soft enough to poke with a fork. Do not overcook. Remove from water. Let cool. Cut in half lengthwise, remove seeds. Place in a baking dish. Fill with bacon, onion, tomatoes and top with cheese. Bake in oven 350 degrees until cheese melts.
