JANET'S ZUCCHINI BOATS 
1/2 c. chopped onion
1/2 c. chopped celery
1 clove garlic, crushed
2 tbsp. salad oil
1 lb. ground beef
1 c. chopped, peeled, fresh tomatoes
3/4 c. sliced fresh mushrooms
3/4 c. cooked rice
2 tbsp. chopped parsley
1 tsp. dried basil leaves
1 tsp. salt
1/2 tsp. pepper
1/2 c. grated Parmesan cheese

In large skillet over medium heat, saute onion, celery and garlic in oil until onion is golden. Remove to bowl. In same skillet, saute ground beef, crumbled. Stir in remaining ingredients except cheese. Add onion, garlic and celery. Mix all well. Spoon into parboiled zucchini halves. Sprinkle with Parmesan cheese. Bake 20 minutes at 350 degrees.
