BUNUELOS 
3/4 c. milk
1/4 c. butter
2 beaten eggs
3 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
Fat for frying (pure lard)
1 c. sugar
3 tbsp. cinnamon

In saucepan, heat milk and butter to a boil, then cool. Stir in beaten eggs. Separately, stir together flour, baking soda and salt. Add the egg mixture and mix well. Knead the dough on a lightly floured surface for about 2 to 3 minutes, until smooth. Shape into 16 balls and let them rest for about 5 minutes.

Roll each ball into 6 inch circles or stretch on knee covered with a clean damp cloth. Fry in deep hot fat (375 degrees) about 4 minutes or until brown, turning the bunuelos once. Drain on paper towel. Sprinkle the sugar and cinnamon mixture on both sides.
