BUNUELOS (Fried Sugar Tortillas) 
3/4 c. milk
1/4 c. butter
2 beaten eggs
3 c. all-purpose flour
1 tsp. baking powder
1 tsp. salt
Fat for frying
Anise Syrup

In saucepan heat milk and butter to boiling; cool. Stir in beaten eggs. Stir together flour, baking powder and salt; add egg mixture and mix well. Knead dough on lightly floured surface 2 to 3 minutes until smooth. Shape into 20 balls. Let rest 5 minutes. Roll each ball into a 4 inch circle. Fry in deep hot fat (375 degrees) about 4 minutes or until brown, turning once. Drain on paper toweling. Drizzle with Anise Syrup. Makes 40.

ANISE SYRUP:

In saucepan bring 1 cup piloncillo or packed dark brown sugar, 1 cup water, and 1 tablespoon aniseed to a full boil. Reduce heat; boil gently, uncovered, 10 to 15 minutes or until syrup is thick. Strain. Makes 3/4 cup.
