MANZO'S MANICOTTI 
1 box manicotti
1 lb. ricotta cheese
1 egg
1 tsp. sugar
A pinch of salt & pepper
1 tsp. parsley
Pasta sauce (homemade or jarred)

In a mixing bowl, combine ricotta, egg, salt, pepper, sugar and parsley. Mix well.

Par boil manicotti until semi-soft. Carefully stuff manicotti with ricotta mixture.

In a glass baking pan, spread a thin layer of sauce on bottom. Lay manicotti side by side, 1/4" apart. Top manicotti with more sauce and top with Mozzarella.

Bake at 350 degrees for about 30 minutes. Serves 6 to 8.
