OAT BRAN MUFFINS 
2 1/4 c. oat bran
1/4 c. brown sugar
1 tbsp. baking powder
1/2 tsp. salt (optional)
3/4 c. skim or whole milk
1/2 c. egg substitute or 2 eggs, beaten
1/4 c. honey
2 tbsp. vegetable oil
1/4 c. nuts (optional)
1/4 c. raisins

Heat oven to 425 degrees. Grease bottom of muffin cups or line with paper baking cups. Combine dry ingredients. Add milk, egg, honey, and oil. Mix just until dry ingredients are moistened.

Stir in nuts and raisins. Bake 15-17 minutes or until golden brown.
