OAT BRAN MUFFINS 
2 1/4 c. unprocessed oat bran
1/4 c. firmly packed brown sugar
1 tsp. baking powder
1/4 tsp. salt
3/4 c. skim milk
1/2 c. egg substitute
1/4 c. honey
2 tsp. vegetable oil

Combine first 4 ingredients in a large bowl; make a well in center of mixture. Combine milk, egg substitute, honey and oil; add to dry mixture, stirring just until moist.

Spoon batter into muffin tins sprayed with Pam, filling 3/4 full. Bake at 425 degrees for 15 minutes. Yields 1 dozen.

Variation: Add 1 teaspoon cinnamon, raisins and nuts.
