MASHED POTATO CASSEROLE 
3 lb. white potatoes
1 1/2 c. sour cream
4 tbsp. butter
1 1/2 tsp. salt
1/4 tsp. pepper

Topping:

1/4 c. bread crumbs
1 tbsp. butter
Cheddar cheese, sprinkled (optional)

Boil potatoes. When done, mash and mix in rest of ingredients.

Bake for about 1 hour at 350°F. Remove from oven and put on topping.

Bake another 10 to 20 minutes. Can make up to a day ahead if needed and then bake.
