POLISH SAUSAGE WITH RED CABBAGE | |
1 head (2 lbs.) red cabbage (sliced) 2 tbsp. butter 1/3 c. lemon juice 1/2 c. beef broth 1/2 tsp. salt 1/4 tsp. pepper 1 lb. Polish sausage (dice) 2 tbsp. brown sugar 1 tbsp. cornstarch 1. Place cabbage in colander. Pour boiling water over this and drain well. 2. Melt butter in skillet. Add cabbage. Stir in lemon juice. Cook and stir until cabbage is pink (8-10 minutes). Add beef broth, salt and pepper. Cover. Simmer for 45 minutes. 3. Mix brown sugar and cornstarch. Stir into cabbage. Bring to boiling, stirring constantly. Reduce heat and add sausage. Cover and cook 30 minutes. Wear an apron! Recipe serves 4. When the outlook is poor, try the uplook. |
