RAISIN NUT BREAD 
1 c. raisins
1 c. water
1 egg, beaten
3/4 c. sugar
1/2 tsp. vanilla
1 1/2 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/2 c. walnuts, chopped

In saucepan combine raisins and water; bring to a boil. Remove from heat; cool to room temperature. Mix together egg, sugar and vanilla. Stir in raisin mixture. Sift flour, baking powder, soda and salt. Add to egg-raisin mixture, beating well. Stir in nuts. Pour into two greased and floured 16 ounce fruit or vegetable cans. Bake in 350 degree oven for 50 to 60 minutes, or until bread tests done. Makes 2 loaves.
