RED VELVET CAKE 
1 1/2 c. sugar
2 oz. red food coloring
2 eggs
2 1/2 c. flour
1 tsp. baking soda
1 tsp. vinegar
1 stick (1/4 lb.) butter
3 tbsp. cocoa or 1 sq. chocolate
1 tsp. vanilla
1 tsp. salt
1 c. buttermilk

Cream butter and sugar well. Mix food coloring and chocolate. Add eggs and blend well. Add cocoa and coloring and vanilla. Mix salt and soda to flour and sift 3 times. Add flour and mix alternately with milk. Add vinegar and mix well. Bake in 350 degree oven for 30 minutes. Bake in three 9 inch pans.

ICING:

10 tbsp. flour
1 1/4 c. shortening
2 tsp. vanilla
1 1/4 c. milk
1 1/4 c. sugar

Mix flour and milk in pan and cook until thick. Cool thoroughly. In mixer blend shortening and sugar and cooked mixture and vanilla. Beat 20 minutes. Ice cake.
