RED VELVET CAKE 
1 c. shortening
1 1/2 c. sugar
1/2 c. coffee
1 c. buttermilk
2 oz. red food coloring
2 eggs
2 c. flour
1 tbsp. cocoa
1/4 salt
1 tbsp. vinegar
1 tsp. baking soda
1 tsp. vanilla

Cream sugar and shortening. Add coloring; mix well. Add eggs, one at a time, beat well. Add coffee, milk and dry ingredients which have been sifted. Fold in vinegar and soda. Bake for 30 to 35 minutes at 350 degrees. Yield: three 9 inch layers. Cool before frosting.

FROSTING:

1 c. milk
1/4 c. flour
1/4 tsp. salt
1 c. shortening
1 c. sugar

Cook milk, flour and salt until thick and then let cool. Cream shortening and sugar, and add to cooked mixture, beating well. Add vanilla. Spread on cake and top with shredded coconut.
