SOUTHERN CORN CAKES 
1 egg
1 1/4 c. buttermilk or sour milk
2 tbsp. soft shortening
3/4 c. corn meal
1/4 c. sifted all-purpose flour
1 tsp. sugar
1/2 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda

Heat griddle slowly while mixing batter. Beat egg well, then beat in rest of ingredients until smooth. Spoon onto hot griddle.

Makes 16.

Note: To make sour milk, add 1 tablespoon vinegar to 1 1/4 cups regular milk and let stand 5 minutes.
