SOUTHERN CORN FRITTERS 
2 c. white cream style corn
2 1/2 c. prepared biscuit mix (Bisquick is good)
2 tbsp. cornmeal
1/2 tsp. salt
1 tbsp. butter, melted

Mix dry ingredients and add to melted butter and corn. Beat well and drop by spoonfuls into deep fat or oil. When brown, serve with syrup and butter.

NOTE: To make lighter batter, separate eggs and beat whites separately and fold in.
