BOBOTIE 
2 oz. dried peaches
2 oz. dried apricots
2 oz. dried apple rings
1 banana, thinly sliced
2 tsp. curry powder
2 tsp. turmeric
1 tsp. sugar
1/2 c. vinegar
1 tsp. salt
1 slice stale bread, soaked in milk
1 onion, lg. and finely chopped
1 tbsp. apricot jam
2 tbsp. seedless raisins
1 1/2 lbs. ground lamb
2 eggs
1/4 pt. milk
Desiccated coconut

Thoroughly wash dried peaches, apricots and apple rings and let them soak wet for approximately 1 hour. Cut. Mix curry powder, turmeric, sugar, vinegar, salt, bread crumbs, onion, jam, peaches, apricots, apple rings, raisins very well and combine thoroughly with meat. Bake in casserole for 45 minutes at 350 degrees. Beat eggs and milk and put banana slices on top; pour over heat; cook for a further 15 minutes until egg custard has set. Sprinkle desiccated coconut over dish before serving. Serve with rice, sliced bananas, and fruit chutney.
