REDWOOD ROOM APPLE PIE | |
1 (9") baked pastry shell 1 tbsp. cornstarch 1/2 c. sugar 1/4 c. heavy cream 3 tbsp. butter 1 tbsp. lemon juice 2 cans sliced cooked apples Combine cornstarch and sugar in a saucepan. Stir in cream mixing well. Cook over medium heat until boiling. Do Not Scorch. Stir in butter and lemon juice. Add drained apples and simmer for 10 minutes, stir occasionally. Cool. Spoon into a baked pastry shell, 3/4 full. MAKE TOPPING: 1 (8 oz.) pkg. cream cheese 1/3 c. sugar 1 egg 1/2 c. coconut, grated 1/2 c. chopped pecans Beat cream cheese and sugar until fluffy. Beat in egg. Spoon over apple filling. Sprinkle coconut and pecans on top. Bake in 350 degree oven for 15-20 minutes until mix on top sets up. Serves 6-8. |
