APPLE CREAM CHEESE PIE 
1 1/4 c. flour
1/4 c. sugar
1 tsp. vanilla
1/4 lb. butter
1 tsp. lemon rind
1 egg yolk

Using hand mixer, mix well. Spread into bottom and sides of springform pan.

FILLING:

2 (8 oz.) pkgs. cream cheese
1/2 c. sugar
2 lg. eggs
1 tsp. vanilla

Cream sugar and cheese. Add vanilla, then add eggs one at a time. Add the egg white from the egg used in the crust. Combine. Pour into the pastry lined pan.

TOPPING:

1/2 c. sugar
5 c. finely chopped apples
1 tsp. cinnamon

Mix sugar, cinnamon and toss apples in sugar mix until evenly coated. Spoon apples over cheese layer. Sprinkle generously with almonds. Bake at 400 degrees for 12 minutes. Reduce the heat to 375 degrees and bake for 30 minutes more. All ingredients should be at room temperature. Push pastry to within 1/2 inch at top of the pan.

I baked two pies as I had a recipe formerly from my husband's aunt and lost it. Thus, searched online and voila! Found this one! It tastes similar to what I had baked in which you make your own pie crust. It made me feel like a gourmet chef! Thank you for sharing this wonderful recipe! As for the cinnamon, I sprinkled more and didn't add the almonds. Perhaps next time, I will add slithered almonds.

I made this recipe for two people. I halved all ingredients except the eggs of course and baked it in a 7x11 dish at the prescribed time and oven temperature. Perfect dessert for us without being too big for two! A great way to use one large Gala apple and a Bartlett pear.
