RAISIN GEM MUFFINS | |
1 cup raisins, covered with water & boil 20 minutes 3/4 cup white sugar 1/3 cup butter 1 egg 1 1/2 cups all-purpose flour 1 tsp. baking soda pinch of salt (optional) Preheat oven to 350°F. Mix sugar and butter. Add egg and beat well. Drain raisins. Add liquid from raisins alternately with flour mixed with baking soda and salt. Lastly add raisins and fold in well. Bake in 350°F oven for 20 minutes. Makes 2 dozen gem-size muffins. Note: You should get 1/2 cup of water from raisins. |
