PERFECT LIMA BEANS 
1 1/2 c. lg. lima beans (dry)
1 sm. ham hock
4 c. water
1 1/2 tsp. salt
1/4 c. molasses
1/2 tsp. dry mustard
2 tbsp. brown sugar
1 sm. onion

Cover lima beans and ham with water. Boil 2 minutes. Cover, let stand 1 hour, then simmer until tender, season with salt. Place beans and 1 1/2 cups water in casserole. Stir in molasses and mustard and brown sugar. Put whole onion in center. Bake at 350 degrees for 1 1/2 hours.
