PORTUGUESE BEANS 
1 lb. pinto beans, dried
1 med. onion, chopped
2-3 cloves garlic, chopped
1 (8 oz.) can tomato sauce
1 1/2 to 3 tbsp. cumin powder
Oil or bacon drippings

1. Soak beans overnight.

2. Simmer beans 1 hour. Salt and pepper to taste, if desired.

3. Brown onion and garlic in oil or drippings.

4. Add onions, garlic, tomato sauce and cumin powder to beans.

5. Simmer beans 30 minutes or more. The beans are better if cooked one day and eaten the next day.
