SUMMER SQUASH ZUCCHINI CASSEROLE 
2 med. summer squash, diced
1 med. zucchini, diced
1 sm. onion, chopped
3/4 c. grated Cheddar
1/4 c. grated Parmesan
1 1/2 c. milk
1 egg, beaten
1 c. instant rice
1/2 tsp. Italian seasoning
1/4 tsp. salt
1/8 tsp. pepper

Combine all ingredients in large bowl; mix well. Pour into greased 9 inch square baking dish.

Regular oven: Bake at 375 degrees for 35 minutes or until liquid is absorbed.

Microwave: Cook on high 20 minutes or until liquid is absorbed.

Since microwave ovens vary in power, you may need to adjust your cooking time.
