SQUASH CASSEROLE 
3 lb. yellow squash
1 large onion, sautéed in butter
8 oz. Velveeta
1 egg
cracker crumbs
salt and pepper
butter

Wash and cut up squash. Cook squash in salted water until tender. Drain and put in dish and chop it with fork a little bit. Add the beaten egg, onion and cheese to squash. Put cracker crumbs on top. Dot with butter.

Bake at 350°F for 1 hour or until golden brown.

For something different, can add 1 pound browned sausage.
