FATTOUCHE 
1 round stale Arab bread
1 c. coarsely chopped onion
4 scallions, coarsely chopped (optional)
1 c. chopped lettuce
1/2 c. finely chopped parsley
1 med. coarsely chopped cucumber
3 c. coarsely chopped tomatoes
1 tbsp. dried mint
Juice of 2 lg. lemons
1/2 c. olive oil
Salt and pepper to taste
2 cloves garlic, crushed

Break the bread into small pieces and put in a large mixing bowl. Add the chopped onions, scallions, lettuce, parsley, cucumber, tomatoes, and mint. Mix well, then leave the bread to absorb the juices, about 10 minutes.

Now make a dressing with the lemon juice, olive oil and garlic. Season with salt and black pepper and pour over the salad mixture. Toss well and chill before serving. Serves 4-6.
