PUMPKIN ROLL 
2 c. all-purpose flour
2 tsp. baking soda
2 c. sugar
4 whole eggs
1/2 tsp. salt
2 tsp. cinnamon
1 c. vegetable oil
2 c. pumpkin (16 oz.)

Mix dry ingredients, beat sugar, oil, eggs and vanilla. Add dry ingredients and pumpkin, mix well. Line cookie sheet with wax paper, batter must not touch pan. Pour in 3 cups batter, bake at 350 degrees for 15 to 20 minutes until done. Take out immediately, dump on towel, remove wax paper, roll in towel. Cool 5 to 10 minutes, then unroll and add filling.

FILLING FOR PUMPKIN ROLL:

1 (8 oz.) cream cheese
1/2 tsp. vanilla
1/2 c. butter
1 lb. confectioners' sugar
